recipe: carnival Venetian's galani






As i promised a recipe for Carnival straight from Venice; many people have a own family recipes of venetian galani or fritelle, this is really really the precious recipe of my wonderful mum!



Necessary:



1 kg of flour

4 eggs

150 gr sugar

100 gr butter

5 - cl 1/2 alcohol (brandy) and 1/2 water

1 pinch of salt
powdered sugar



peanut oil (to fry sweets it's the best)



How to do



bring flour, eggs, sugar, butter, alcohol/ water and salt, and mix everything on the table, till it become like the consistency of the pastry.



now you need a machine to pull the pasta

but if you don't have you can do in the old traditional way: with rolling pin.





   

start from a quite high level of pasta to arrive at one of the last size of the machine: really thin. And then cut them in some parts, they don't have to be too regular, don't worry.








  Practice two cuts on every galano



Warm the oil and when it's hot, start to fry the galani

 

finish putting some powdered sugar.


That's ready....just try!!!(PS: you can cook also on your oven, put galani on oven paper and put at 180°C; be care, they cook in a moment)
